Commercial Deep Fryer with Oil and Chips

Choosing the best oil for your commercial deep fryer will have a massive impact on the taste of your dishes and the budget needed for inventory. 

One of the first things you will want to consider when choosing your oil is whether it has a high smoking point. A smoking point is how hot the oil can get before it starts smoking. Once your oil smokes, it begins to break down and become unusable. 

You will also want to consider taste. Neutral oils are always best for deep frying because they won’t alter the flavour of your dishes. You work hard to create tasty meals for your customers, you don’t want it to be your frying oil that ruins all that hard work!

Here are three popular oil choices for your commercial deep fryer.

Peanut Oil

Peanut oil has one of the highest smoking points, at 230c. Most frying occurs between 175c and 200c, so by using peanut oil you are well out of that risk zone.

But what about customers with a peanut allergy?

Most people with peanut allergies are allergic to the kernel of the peanut, not the oil. However, if you opt to use this oil you should ensure all customers are aware that you use peanut oil.

It also has a very neutral taste and shouldn’t impact the flavour of your fried dishes.

A downside to using peanut oil is that it is one of the most expensive oils on the market. Some kitchens will blend peanut oil with vegetable oil. This decreases the price but maintains its high smoke point.

Canola Oil

Canola oil is another popular deep fryer oil choice. It is a little cheaper than peanut oil but does come with a lower smoke point. Canola oil will begin to smoke at 200c, just at the top limit of your frying temperatures.

Canola oil has a light colour and comes from the rapeseed plant and has a very neutral flavour that lets the flavour of your dishes take centre stage.

Vegetable Oil

Vegetable oil is often considered the traditional fryer oil and has a similar smoke point to canola oil, coming in at 200c and has a very neutral taste. The very thing you need from your deep fryer oil.

Just like canola oil, vegetable oil is also one of the cheapest oils on the market right now. It’s a great multi-purpose oil that can be used in both your commercial deep fryer and your frying pans.
